Eggnog Bundt Cake with an Iced Crumb Topping

I love using the Christmas season as an excuse to buy some eggnog. I love it, but it grosses the rest of my family out. Sooo, once a year I indulge. This year I bought a bottle and it sat in my fridge for weeks, no joke. I don't know what I was saving it for, but every time I went to grab it, it just didn't feel right. Then I found this piece of art and figured it was a sign!

Really, Kathleen at Gonna Want Seconds had me at hello. I love a good eggnog dessert that actually uses eggnog in the recipe. It's actually quite common (and quite disappointing) to read an 'eggnog' baked-good recipe that simply includes rum extract and nutmeg. Rum and nutmeg an eggnog do not make. This was an ideal recipe that helped me use up my bottle and left me a little for drinking out of the carton.



Can you say holy crumb topping! This is the best, most tender coffee cake crumb topping I have had, and I plan on using it again and again!



I really could have eaten the cake just like this, still piping hot from the oven. If you're making this as a breakfast or brunch item, serve it straight as a crumb cake like it is, skip the icing. If you're making it as a dessert serve it with the icing! It's very sweet so it'll satisfy the sugar-hungry.

  2. Thank you very much Cathy! This crumb topping is the best I've ever made. I've always felt disappointed with crumb topping recipes, but this one is perfect if you like the crumb to be in the spotlight!
