Chocolate Chip Peanut Butter Banana Muffins

Yesterday a super awesome someone brought me some banana bread (from another super awesome person) and it was....super awesome. Then, as I was thumbing through my daily recipe reads I saw Jaime O's post for Chocolate Chip Peanut Butter Banana Muffins. Since I happened to have some bananas hanging around, and since I was now in the mood for something banana-y, I decided to make these.

Banana Split Cupcakes

January is a crazy month for birthdays here. I get to make cake twice (three times if I'm feeling nice), plus classroom treats. With only five days in between birthdays, we're pretty much over cake after the first celebration. Because of that, this years first birthday 'cake' was really inedible pie. I was saving my energy for the second party, because I had such high hopes for this gorgeous chocolate fudge cake. Those hopes died when the cake turned into a major fail. These, however, were winners.

Beefy Tot Casserole

I've never had tater tot casserole, in the traditional sense of the term. I've heard about it plenty of times, but it sort of strikes me as a retro style dish. So I saw this recipe in a Taste of Home magazine from 2010, I tore it out, added it to the to-do pile....that was it. Fast forward some four years later and here we are. I actually stumbled on this recipe in a weak attempt to purge some things from that to-do pile (and to try to find my cheesecake recipe that took me countless attempts to perfect...no luck in that department). It wasn't until I found some fun looking tater tots (yes, fun) that I actually considered making this for real.

Sweet Potato Scones

I have a thing for scones. I used to think they were just over-baked biscuits, until I made them myself. My first take at homemade scones was with my Candy Cane Scones and they were so delicious I think I may have eaten the entire batch....maybe.

These sweet potato scones are not as flaky as others, but they are super moist thanks to the sweet potatoes and carrots. I still thought they needed a little something so I tossed on some orange poppy seed glaze for good measure.

Smokey White Cheddar Crisps

Last week I was loitering on g+ and happened upon an experiment that was in the works to demonstrate the power of branding and marketing on Google Plus. Honestly, they had me at cooking experiment. The idea is to use either Kraft Mac & Cheese or Cracker Barrel Cheese. I had fun with both products, but this recipe uses the Cracker Barrel Extra-Sharp White Cheddar Cheese.

Years ago I made cheese straws with the help of Deb and I was in love with the buttery, crumbly treat. I recently had a craving for the straws, but admittedly I wasn't very motivated to get in the kitchen. This KraftyCooking challenge was the push I needed!

Veggie Chicken Pasta with Gravy

It's no secret that chicken and pasta is my go-to dinner, especially when I'm in a rush. There are so many things you can do with this foundation and this veggie chicken and pasta with gravy is a great example. This is one of those use what you have on hand sort of meals. I was able to throw in whatever veggies I had hanging in the fridge, which I love. Topping this with gravy as the sauce added a comfort food element, so it was perfect for a cold-weather dinner.

Making Goals for the New Year

I'm always a little put off by New Year resolutions. I don't see why we need this day to decide to make a change. Plus it seems too committal, and no one likes to let herself down. So instead of resolutions, I'm going to lay out a few goals to look forward to.

January: No fast food (including take out). I had my fill of convenience food while we were on vacation this month, time to get back on track. It's easier than it seems...right?! Also, I want to make a big batch of handmade birthday cards so everyone gets something special (not store bought) this year.

February: Test 4 new cake recipes. This may be in preparation for my Bestie's birthday in March...perhaps.
